Sunomono



Or simply cucumber and Daikon salad, very popular vinegary Japanese salad. Su in Japanese means vinegar and daikon translated as large root.

Daikon is very large, white and has mild taste East Asian radish.

Sunomono is very refreshing salad and can be served with many Japanese dishes. Sunomono is usually served as a side dish or appetizer.






Ingredients:

1 small cucumber, thinly sliced

1 small daikon, peeled and thinly sliced

4 tablespoon rice vinegar

1 teaspoon salt

1 tablespoon sugar

1 teaspoon ginger powder

Method:

In a bowl combine cucumber and radish, salt and leave to stand for about 10 minutes.

In separate bowl mix vinegar, sugar and ginger powder; stir until sugar dissolves.

Pour mixture over cucumber and radish and let marinate for 20 minutes before serving.
