Goats Cheese Salad with Honey Mustard Dressing

(Serves 2)


200 grams lettuce, chopped

2 radishes, sliced

10 cherry tomatoes cut in halves

100 gram cucumber, chopped

2 slices of bread

4 slices goats’ cheese

For dressing:

1 generous teaspoon wholegrain mustard

1 teaspoon honey

1 tablespoon lemon juice

3 tablespoon olive oil

Salt, pepper to taste


Put slices of bread in toaster and toast until golden brown, cut in halves.

In a mixing bowl combine all veggies; drizzle with salad dressing and toss well. Place on serving plate equal amount of salad; put halves of toasted bread and top with cheese.

For dressing:

In small bowl combine all ingredients, stir well.
