Garlic Roasted Butternut Squash

Butternut squash has yellow skin and deep orange flesh with a sweet, nutty flavour. Can be baked, roasted or pureed; great in casseroles, soups or breads.

(Serves 2)


1 medium butternut squash

2-3 garlic cloves, minced

20 gram butter


Preheat oven to 210 degrees C. Grease a baking tray.

Wash the butternut squash thoroughly then cut in four pieces. Transfer to baking tray.

In small saucepan brown garlic, add butter and melt it. When melted drizzle over the butternut squash.

Bake for 45 min or until soft.
