Karantita



Karantita is Algerian dish made from chickpea flour. This dish is one of the favourite in Algeria and is made in every family.

It usually served hot, spread on baguette with harissa sauce and sprinkled with cumin on top.

Karantita has different names, such as karane, guarantita, kalantita and quaratita.

This is my husband’s recipe.


(Serves 4)

Ingredients:

250 grams chickpeas flour

3 cups of water

1 teaspoon salt

4 tablespoons oil

½ teaspoon cumin

½ teaspoon black pepper

1 egg


Method:

Preheat oven to 180 degrees C. Grease baking tray.

In a bowl combine chickpea flour, salt, pepper, cumin; gradually pour in water; add oil.

Whisk the egg in a small bowl, and then pour over chickpea batter.

Transfer batter to the tray and bake for 35-40 minutes or until top is golden.
