Spicy Apple Bundt Cakes

Even though she lives less than an hour away, I don’t see K. and her two adorable sons very often.  A. just loves to spend time with them and while children are occupied with each other, it gives us time to catch up and have a little gossip.

Immediately I started to think what I could bring with me. Million ideas rushed through my mind.



The weather in the morning was promising, sun was shining and we thought it would be great to go to the park. But by the time I and A. got to her it looked it was going to rain. We decided to stay in.

K. loves to cook as much as I do and whenever we visit her table is full with delicious food. And this time was no different.  She made absolutely delicious mustard seed marinated chicken skewers, freshly baked pitas, salad and that’s only to name few.

After the lunch it still wasn’t raining and we managed to have a little walk around the yard. And I saw this year first snowdrops! It just made me smile!

After thinking what to bring with me, I decide to go for spicy apple mini bundt cakes. They were perfect for afternoon coffee.


Prep time : 15-20 min
Cooking time : 20 min
(Makes 12 mini cakes)


Ingredients:

150 g all-purpose flour
40 g almond flour
2 tsp baking powder
½ tsp salt
2 tbs cocoa powder
1 ½ tsp cinnamon
½ - 1 tsp nutmeg
120 g butter, softened
150 g brown sugar
2 eggs
3 small apples, grated
 Fine sugar for coating


Method:

Preheat oven to 180C. Grease 12 mini cake tins.

In a large bowl sift together first seven ingredients, set aside.

In a separate bowl beat butter, sugar then add eggs. Mix in grated apples.

Incorporate wet ingredients with dry. Divide batter between cake tins and bake for 20 min or until ready. Leave to cool for a bit then coat in sugar.

  4. Lovely photos and enticing little cakes! Apple is one of my favorite flavors, but unfortunately the kids don't like it as much as I do and I end up eating it all myself. Well... maybe that's a good thing!! ;)
