Hachapuri

Hachapuri is Georgian flat bread with cheese and is one of the most famous dishes in Georgia. It’s very easy to prepare and can be served as a main dish or an alternative to bread.

(Makes 6)

Ingredients:

250 ml milk, warm

200 ml lukewarm water

7 gram yeast

300 gram all purpose flour

1 teaspoon sugar

½ teaspoon salt

4 tablespoons of oil

500 gram cheese, grated

Oil for frying

Melted butter for brushing

Method:

In a large mixing bowl mix yeast, salt, sugar and 60 gram of flour. Add milk and water; mix well and let stand for about 10 minutes.

Add remaining flour; mix well then add oil.

Leave in a warm place to rise, for about an hour.

When dough has risen, transfer to a floured surface and divide into 6 balls.

Roll out each ball into a small size plate; place cheese in the middle. Then gather all edges to the centre. Flip the cake so the seam is down and roll out again into small size plate.

Preheat frying pan, add oil. Fry bread on both sides until each side is golden brown. Brush with melted butter. Serve immediately.
