Dried apricot and sultana cake



This is very easy cake recipe and great to have with your tea or coffee.

Ingredients:

100 gr sugar

210 gr flour

3 eggs

1 teaspoon baking powder

100 gr dried apricot, chopped

100 gr sultanas

18o butter (unsalted)

Method:

Preheat oven to 180 degrees C. Mix flour with baking powder. In a separate bowl mix butter with sugar until well combined then add eggs. Add flour, apricots and sultanas to the egg-butter mixture and stir well. Bake for 35-45 minutes or until done. Sprinkle with cocoa powder or confectioners' sugar.
